Pack the vegetables and therefore the beet, if using, during a 2-quart jar. Add the spices and a large portion of the garlic.
In a saucepan, add the remaining garlic, vinegar, water, salt, peppercorns, bay leaves, and cinnamon stick with a boil. Pour the brine over the vegetables within the jar, and affix the lid.
When the jar has cooled, store within the fridge. The pickles will begin to develop during a week approximately , with the flavor deepening during a month’s time.
